🌱 The tofu in this recipe is a great source of protein and is an excellent meat alternative. In addition, it does not contain any cholesterol, since it is plant based!

Ingredients:
- 2 tbs of vegetable oil
- 1 large leek, sliced
- 2 green bell peppers, diced
- 2 cups of spinach, packed
- 1/2 onion, diced
- 1/2 granny smith apple, diced
- 454g package of soft or semi-firm tofu
- 3 cups of water
- 1 cup of unsweet enriched soy beverage
- 2 tsp of salt
- 2 tsp of oregano
Preparation:
- In a large pot, brown onions in vegetable oil over medium-high heat
- Add bell peppers, and cook until brown
- Add leek, tofu and water
- Bring to a boil and let simmer for 20 minutes or until ingredients are very soft
- Mix in spinach, salt and oregano
- Remove from heat and add soy beverage
- Using a hand mixer or a blender, blend until smooth
- Serve and enjoy!
