All Green Potage

Spring is here, so it is time to try out new fresh recipes like this vegan green potage to add to your meatless Mondays! And do you want to know a little secret? This soup tastes like pizza! 🍕

🌱 The tofu in this recipe is a great source of protein and is an excellent meat alternative. In addition, it does not contain any cholesterol, since it is plant based!


Servings: 8 servings

Preparation time: 1 hr


  • 2 tbs of vegetable oil
  • 1 large leek, sliced
  • 2 green bell peppers, diced
  • 2 cups of spinach, packed
  • 1/2 onion, diced
  • 1/2 granny smith apple, diced
  • 454g package of soft or semi-firm tofu
  • 3 cups of water
  • 1 cup of unsweet enriched soy beverage
  • 2 tsp of salt
  • 2 tsp of oregano



  1. In a large pot, brown onions in vegetable oil over medium-high heat
  2. Add bell peppers, and cook until brown
  3. Add leek, tofu and water
  4. Bring to a boil and let simmer for 20 minutes or until ingredients are very soft
  5. Mix in spinach, salt and oregano
  6. Remove from heat and add soy beverage
  7. Using a hand mixer or a blender, blend until smooth
  8. Serve and enjoy!
